Rock Cornish Game Hen

A classic preparation of whole fresh cornish hen, glazed with Grand Marnier liqueur and fresh orange zest while roasted to a golden brown finish.

Herb Roasted Chicken

A boneless skin on frenched farm fresh chicken breast rubbed with a herb butter which includes fresh basil, dill, parsley tarragon, with rosemary and lemon zest.

An apple cider marinated boneless free range chicken breast, grilled and stuffed with caramelized onions, apples, dried cherries and fontina cheese finished with an apple cider reduction sauce.

6oz to 7oz filet of sea bass roasted in a sundried and fresh tomato provencale sauce, with fresh thyme, garlic, onion, capers and a touch of hot pepper.
